Antiviral? Check the Science.
Recent research on the β-glucans present in Shiitake mushrooms has suggested extreme efficacy in preventing viral replication after infection in both enveloped and non-enveloped viruses.

What about cancer?
One word: Lentinan. Lentinan is the polysaccharide that gives our mushrooms their distinctive ‘umami’ and garlicky flavor profile. Our log-grown production method yields Lentinan levels three times higher than those of shiitakes grown on sawdust or substrate!
Lentinan supports cholesterol reduction, immune system enhancement, and tumor suppression through T-cell boosting properties

We harvest our caps to maximize Lentinan levels, harvesting twice per day to catch caps at the optimal "veil break" stage of development*
Wild Harvest Shiitake contain high levels of other immunogenic agents such as Selenium, Potassium, and Vitamins B6 and B12
Because we grow outdoors, our shiitakes also absorb Vitamin D directly from the sun, just like humans do!
